After such a successful week last year, we
are hosting another week of rising star Chefs. We are offering
young and talented professionals the opportunity to cook in an
entirely different environment showcasing their particular style
and perform at the top of their game.
Outstanding, innovative dining...
With each night The Pass welcomes a different young
talented chef through its doors.
With so many chefs aspiring to be next Gordon Ramsay, we allow
them to showcase their talents by preparing a creative six-course
menu desgined to awaken your taste buds. Each of the guest chefs
have remarkable backgrounds and outstanding
talent, with the support of our knowledgable Pass Team,
this evening is sure to leave you wanting more.

Richard Allen ,Tassili at the Grand Hotel, Jersey

RIchard Allen joined Tassili ,at the Grand Hotel in Jersey as
head chef in 2008.
Before taking this position, Richard worked at the 2 Michelin
star restaurant Le Gavroche in London, alongside Michele Roux
Jnr. RIchard remains in contact with the Roux Family, and is
working in parternship with the renowned chef Albert Roux to
promote Jersey's best produce.
Previous to his time at Le Gavroche, Richard worked in many
Michelin starred restaurant across the country, including Bath
Priory, Moody Goose and the Cavendish at Dukes Hotel.
Richard describes his food as imaginative in style, presented using
the finest of ingredients, with a particular emphaisis on local
produce
Ben
Goldsmith, Whites Restaurant, Stening (West
Sussex)
Ben Goldsmith is a local Sussex lad who worked at Whites Restaurant
in Steyning.
Ben was named "Young chef of the year" in the Sussex Food and Drink
Awards 2008/2009. Following on from his accolade, Ben acquired a
job at The Talbot Inn in Cuckfield as head chef, due to open very
soon where he will produce menus with an inspired and
ambitious style, with a contemporary twist, using as much seasonal
local produce as possible.
Russell
Bateman, Colettes, The Grove, Chandlers Cross
(Hertfordshire)
Russel Bateman is the head chef at
Colettes Restaurant at Chandlers Cross, where he was awarded 3 AA
rosettes. Formerly, Russell was Head Chef at Feathers Hotel in
Oxford, were he developed his own unique style and creativity and
previous to that worked in many Michelin starred restaurants,
including Petrus, Midsummer House and Auberge de l'Eridan.
Russell prides himself on using the freshest and best
ingredients for his innovative dishes and describes his food style
as cosmopolitan,embracing diverse food cultures.
Mark
Poynton, Restaurant Alimentum, Cambridge
Mark Poynton joined Restaurant Alimentum in 2009 from Midsummer
House, the acclaimed two-star Michelin restaurant. In 2010, Mark
became the chef Patron of Restaurant Alimentum, where he continued
to offer relaxed fine dining and food with creative flair and
personnality; brimming with quality and originality.
Mark Poynton currently holds 3 AA rosettes and has won numerous
awards for his fantastic restaurant.
Jon Howe,
Lumiere, Cheltenham
Jon Howe has trained under some of the finest names in the country,
most notably John Campbell, Heston Blumenthal & Stuart
McCloud.
After studying at Bath College, he worked for a number of
Michelin-starred and other highly acclaimed restaurants, gatropubs
and hotels, including Lords of the Manor in Upper Slaughter &
The Castle House Hotel in Hereford.
He took his first Head Chef's job at the age of 25 at The Three
Crowns in Ullingswick in Herefordshire to critical acclaim,
achieving a Michelin Bib Gourmand, 2 AA rosettes and Les Routiers
Dining Pub of the Year for UK and Ireland 2003 within the first 8
months in the position.
Jon and his partner Helen, took the helm at Lumiere in January
2009, breathing new life into a favourite local restaurant and now
given the freedom to cook his own food with no managerial or owner
restraints for the first time his culinary ability has developed
its own distinctive identidy at Lumiere. 5 months later, Jon was
nominated by his customers for the Costwold Life Chef of the Year
award...he came runner up in the finals.
12 months later Lumiere scooped the most converted of the Cotswold
Life Food & Drink Awards - The Restaurant of the Year
Award.
